Mike,

If you can't get ahold of tiki bitters, I'd suggest using Angostura. You want some bitters with a strong spice component to add a little oomph. Peychaud's or orange bitters are going to be a little too fruity.

This sounds and looks great. What could one use in place of Tiki bitters?

Chuck,

They all looked delicious, but my patience for opening a young coconut is limited. I'll have to work up to the Luau Coconut.

Joe,

Guess it's a good thing I stocked up on St. James earlier this year. Thanks for the sub recommendations!

Good luck finding St. James Extra Old Rum. The U.S. importer is out of it, and they claim that the distillery in Martinique is out of it. Supplies are dwindling.

For great Martinique rhum agricole that is more than an adequate substitute, try Neisson "Élevé Sous Bois" or La Favorite Ambre.

Mmmmm ... I'll have to try that variation! I might even splurge for the orchid garnish.

We've finally managed to make all of Jeff and Wayne's cocktails from the dinner, and they're all stupendously good. The Luau Coconut is particularly fun!
